Move Over Ketchup


Last week I was listening to the radio and I heard that something has taken ketchup’s place.  I didn’t know the answer immediately but when they said – Ranch Dressing – I wasn’t surprised.  Many parents have gotten kids to eat veggies by dipping in ranch.  Some kids dip everything : )  And then there are some, like my son, who thinks you should not dip anything — in ranch or ketchup.

A good dressing makes eating salad from tolerable to delicious.  I have started making most all of our dressings — they are so much more nutritious and have zero preservatives.  Here is our current favorite dressing.  I found the original recipe here.  I have made a few changes.

Ranch Dressing

1 1/4 cups cashews (soak for 20 min-2 hours if you have time)

3/4 cup water

2 1/2 Tbsp Apple Cider Vinegar

1/3 cup extra virgin Olive Oil

3 Tbsp Agave nectar

3 large cloves garlic

3 Tsp onion powder

1 tsp dill

1 tsp salt

1/2 tsp black pepper

Put it all in the blender and mix on high speed.  This thickens up significantly after sitting in the fridge.  But immediately after mixing it is quite runny.  If you soak your cashews then they are smoother, but it is not essential to soak them if you are in a hurry.

I will be mixing some of this up today because we finished off the last batch last night.  Yummm!
