More Joy with Proper Fuel


David has encouraged me for quite a while to jump in and add stuff to our blog – with my focus being more on our ability to have more joy when we fuel our bodies properly.

In October of last year I got serious about losing weight.  I lost 50 pounds in the next five months.  I am now in maintenance mode – which is both fun and somewhat anxiety producing.  It was easier when I was on a set plan.  I knew if I was following the plan or not.  Now I am back to paying attention to my body – when am I truly hungry?  And when am I full?

In another post I will likely tell my story of how I became zealous about eating whole foods (grains, fruits, veggies).  At this point I will just state it as fact – I AM passionate about eating whole foods.  It is really fun to watch my kids enjoy things like kale chips and seasoned almonds.  They head for the pantry and there are several different healthy options there for them.

Today I made banana soft serve ice cream when the younger two arrived home.  It is so incredibly easy to make.  We chopped up some strawberries and mixed them in with it and it was delicious.

Here is a picture of what it looked like after it was smooth, in the food processor.  In the future I will take pictures all along the way – I just didn’t think of it today until it was already mixed up.  When my son saw me take a picture of it, he thought I was truly strange!

 

 

 

 

 

 

 

Banana Soft Serve Ice Cream

When bananas are ripe, peel them and break them in pieces 1-2 inches long (I usually break each banana into about four pieces).  Put them on a plate or cookie sheet, and freeze.  Make sure you do not use green bananas – they really ruin any smoothie or ice cream with their bitter flavor.

Put about 6-8 of these frozen banana pieces (so 1 ½-2 bananas) into a food processor with a S-blade.

Add about 1/3 cup of milk of your choice (I use almond milk)

Start pulsing the food processor until the bananas start getting broken down a little.  Then turn on the food processor and let it run for a few minutes until the bananas are smooth.  Watch the mixture and if you need to add more milk you can or you may need to open the food processor and scrape the sides to help everything move around well.

Serve.  So delicious and completely guilt free!  Enjoy!
