AIP Pork Chop Monday

David has often encouraged me to share my voice on our blog.  If you scroll back far enough on our Quotes / Blog page, you will see that I have shared some recipes in the past.  I plan to share more in the future because I believe food is powerful medicine (or otherwise) for our body.  I love purple, I love to be creative and I hope to share a thing or two that you will enjoy!

I have recently learned about the autoimmune protocol (AIP) and have been changing my food intake (I hate the word diet — lots of negative connotations with that word) for the past 6 weeks or so to see if I feel better.  Tonight here is what I am making — I’ll let you know how many stars we give it.

Slow Cooker Hawaiian Pork Chops (AIP/Paleo)


3-4 boneless pork chops

3 TBS Apple Cider Vinegar

1 TBS Maple Syrup

2 TBS Olive Oil

½ tsp sea salt

½ tsp garlic powder

¼ tsp ground ginger

½ cup diced pineapple

3 strips of bacon


Place your pork chops in the crock of your slow cooker. In a small bowl combine your apple cider vinegar, maple syrup, olive oil, sea salt, garlic powder, and ginger. Stir until well mixed and pour over your pork chops. Cover and cook on high for about 3 hours. When your pork chops are tender take them out of the slow cooker and top them with your diced pineapple and crumbled bacon. Serve and enjoy.
